A sea-front bar in the heart of Ta’ Xbiex, one of Malta’s coolest up-and-coming areas. Overlooking the best view of Valletta, Solt’a blends the warmth of a neighbourhood hangout with the buzz of live music, DJ’s, and great selection of drinks and favourites.
OPENING SOMETIME IN DECEMBER
After first coming to Malta at 18, I’ve returned every single year without fail. Now at 36, nearly two decades later, the island feels more like home than anywhere else. I’m Dave, and my journey through the UK hospitality world has spanned more than 22 years, running clubs, pubs, bars, and restaurants. From the success of 151 Club, The Tommy Tucker Pub, and The Imperial Arms, I’ve learned what it takes to build venues that become part of people’s lives.
That experience — along with a long-standing love for Malta — made the decision clear: it was time to bring everything I’ve learned to the island and create something new.
I’m joined by my business partner Seb, a world traveller with an exceptional palate and a passion for the finest restaurants around the globe. His taste and vision elevate everything we do. Alongside us is our general manager, Matt, whose experience spans ski resorts, the Greek islands, and a wide range of pubs, bars, and restaurants across Europe. Together, we bring decades of expertise and a shared ambition to create something truly special.
We chose Ta’ Xbiex for its cool, edgy, up-and-coming atmosphere — a neighbourhood full of character and opportunity. It’s the perfect home for our new venture: a relaxed bar offering great drinks paired with elevated sharing plates, inspired by Maltese flavours and global influences.
This is the beginning of something exciting, and we can’t wait to share it with Malta.
Our Journey
These photos show the story from the very beginning to where we are today. When we first stepped into the space, there was no lighting, no water, nothing — just an empty shell and a huge vision. It’s been a long, challenging, and incredibly exciting journey, starting all the way back in January, when we decided to bring this idea to life almost a year ago.
Every step, every setback, and every breakthrough has brought us closer to opening the doors. Seeing how far we’ve come makes it all feel worth it — and we can’t wait to share the finished space with everyone.

Sophie—my twin sister and the creative mind behind our culinary direction—as Food Innovation Manager at Gousto and has founded several successful food ventures in central London.
